Tahini Veggies with Pitas

I don't have a picture of this recipe, but I wanted to post it here for reference. It's a little bit of a strong tasting sauce, but a nice filling version of a pita. Jeff isn't a fan of regular pitas with fresh veggies, but he likes this recipe.

Tahini Veggies with Pitas
Sauce:
1 1/2 T tahini
1 T oil
1 1/2 t lemon juice or apple cider vinegar
1 1/2 t agave nectar
1 t miso
1 t water

Veggies:
1/2 sweet onion, sliced
1 c eggplant, peeled and chopped
1 small bell pepper, sliced
2-3 mushrooms, sliced
1/2 medium tomato, chopped
1 c soy curls, soaked for 15 minutes in warm water and drained

Saute vegetables. Add sauce and heat for a couple of minutes. Serve warm inside whole wheat pitas.
